Sugar Eggs

Ingredients:

  • • 2 cups Zulka Morena Sugar
  • • 1 tablespoon meringue powder
  • • 1 tablespoon water
  • Royal Icing:
  • • 1/3 cup water
  • • 1/4 cup meringue powder
  • • 1 lb. Zulka Powdered Sugar

Instructions:

  1. Get supplies ready: Zulka Morena Sugar, meringue powder, food coloring, water, prepared molds, cardboard squares for drying the sugar eggs.
  2. Add meringue powder, 3-5 drops of food coloring, water and sugar to a bowl and mix until it resembles wet sand.
  3. Press sugar mixture into the molds, evening out the back with a spatula or knife.
  4. Immediately turn on to a piece of cardboard and carefully remove the mold. Repeat until all your molds are made. Let dry at room temperature for 24 hours.
  5. Prepare royal icing by mixing all of the ingredients together with an electric or stand mixer until icing peaks (about 9 minutes). Keep in an airtight container with a damp paper towel over the surface to keep from drying out. Do not refrigerate.
  6. To glue sugar egg pieces together, spread about 1 tablespoon of royal icing on the edges of one sugar egg piece and press gently together with another. Wipe any excess icing that oozes out. Place one side on cardboard and let dry 12-16 hours.
  7. Dye the royal icing different colors using gel food colors. Prepare icing bags with tips (Wilton 5, 18) and fill with 1/2 cup or so of the colored icing in each bag. Don’t overfill. Twist the end of the bag and secure with a rubber band. To prevent the icing from drying in the tip, put a couple of wet paper towels in a cup and place the prepared bags in the cup tip side down.
  8. Decorate the sugar eggs: Using one color at a time, squeeze a little icing out on to a paper towel to make sure there’s no water in the tip from sitting in the cup. Then gently squeeze the bag and pipe lines, dots or any design you like. Let the icing set up for 5-10 minutes before adding the next color or when layering the same color. Once fully decorated let dry overnight to set the royal icing. Keep stored in an airtight container when not using as decoration.

Sugar Skulls

Ingredients:

  • 1 cup Zulka Morena Sugar
  • 1 1/2 tsp meringue powder
  • 1 1/2 tsp water
  • Royal Icing:
  • 2/3 cup water
  • 1/2 cup meringue powder
  • 2 lbs powdered sugar

Instructions:

Makes 2 medium altar sugar skulls

  1. Get supplies ready: Sugar, meringue powder, water, prepared molds, cardboard squares for drying the skulls
  2. Mix together meringue powder, water and sugar and mix until it resembles wet sand
  3. Press sugar mixture into the molds, evening out the back with a spatula or knife
  4. Immediately turn onto cardboard pieces and carefully remove molds. Repeat until all your molds are made. Let dry at room temperature for 24 hours.
  5. Prepare royal icing by mixing all of the ingredients together with an electric or stand mixer until icing peaks (about 9 minutes). Keep in an airtight container with a damp paper towel over the surface to keep from drying out. Do not refrigerate.
  6. Spread about 1-2 tsp royal icing on the back of one skull piece and glue to the other. Press gently together and wipe any excess that oozes out. Place upright on cardboard and let dry 12-16 hours.
  7. Dye the royal icing different colors using gel food colors. Prepare icing bags with small round tips (Wilton 1, 2, or 3 are best) and fill with 1/2 cup or so of the colored icing in each bag. Don’t overfill. Twist the end of the bag and secure with a rubberband. Place a couple of wet paper towels crumpled up in a cup and place the prepared bags in tip side down. This will prevent the icing from drying in the tip.
  8. Decorate the skulls: Using one color at a time, squeeze a little icing out on to a paper towel to make sure there’s no water in the tip from being in the cup. Then gently squeeze the bag and pipe lines, dots or any design you like. Let the icing set up for 5-10 minutes before adding the next color or when layering the same color. For example, for a mouth, pipe the long horizontal line first and let dry for 5-10 minutes. Once dry, pipe the shorter lines perpendicular to the mouth line to look like teeth.

Once fully decorated let dry overnight to set the royal icing. Keep stored in an airtight container when not using as decoration.

Simple Syrup

Ingredients:

  • 1 cup Zulka Morena sugar
  • 1 cup water

Instructions:

In a heavy bottomed saucepan over medium heat, combine the sugar and water and stir until the sugar is dissolved. Once dissolved, keep at a low simmer for 5 minutes.  Do not let the mixture boil. The mixture will be a very light amber color.  Let it cool completely before transferring to glass jars.  Keep refrigerated.

For flavored options, substitute some of the water for other liquids such as fruit juices or citrus. For example, substitute 1/4 cup water for ¼ cup lime juice to make a lime simple syrup.

Vanilla Sugar

Ingredients:

  • 1 cup Zulka Morena Sugar
  • 1-2 Vanilla beans
  • Airtight container, such as a mason jar.

Instructions:

Place the sugar in a bowl. Split one vanilla bean lengthwise with a sharp knife. Use the knife to carefully scrape the seeds out and add these to the bowl of sugar. Gently rub the sugar and seeds between your fingers until the seeds are mixed evenly throughout the sugar.  Add the seeds from a second vanilla bean for a stronger scent and flavor.

Store in an airtight container. Add the vanilla bean pods to the container to further the develop the flavor and fragrance, if desired.

You can use this in any number of applications!  Try sprinkling it on fruit, cereal, pancakes and waffles, or any type of dessert for a wonderful flavor and aroma.

Cinnamon Sugar

Ingredients:

  • 1 cup Zulka Morena Sugar
  • 2 tsp- 1 Tbsp ground cinnamon

Instructions:

Place the sugar in a bowl. Add in the cinnamon a little at a time and stir well after each addition. Keep adding cinnamon until desired flavor is reached.  Store in an airtight container.
