Sweet & Spicy Roasted Delicata Squash

Ingredients:

  • 3-4 delicata squash
  • 2/3 c walnuts, coarsely chopped and toasted
  • ½ c dried cranberries, diced
  • 3 Tbsp Italian parsley, chopped
  • Spice mix:
  • 2 tsp Zulka Morena sugar
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground cayenne pepper
  • ½ tsp sea salt
  • ¼ tsp ground ginger
  • ¼ tsp ground allspice
  • ¼ tsp ground black pepper
  • 3 Tbsp coconut or olive oil

Instructions:

Preheat oven to 4000 F.  Set out a baking sheet and drizzle one tablespoon of oil on to it.

Trim the ends off each squash and cut in half lengthwise. Scoop out the seeds and slice into ½ inch thick half rounds. Place in a large bowl.

In a small bowl combine the seasonings and stir well.

Drizzle the remaining oil over the squash slices and sprinkle with half of the spice mixture.  Spread the squash evenly over the baking sheet and sprinkle the remaining spice mixture over the squash. Roast for 20 minutes.

Transfer to a serving platter and sprinkle the walnuts, dried cranberries and parsley on top. Serve immediately while warm.

Strawberry Mango Nachos

Ingredients:

  • strawberries
  • 1 mango
  • 1/4 cup melted butter
  • 1/4 cup whipping cream
  • 1/2 cup chocolate chips
  • 4 T. Zulka Morena Sugar
  • 1/2 T. ground cinnamon
  • flour tortillas (taco size, I used two)

Instructions:

Prepare fruit by washing the strawberries and drying, then slice them. Cut the skin from the mango and chop the mango in bit size pieces.

Melt butter in a small bowl in the microwave and then set aside.

Heat the whipping cream in the microwave to hot but not boiling. Then add in the chocolate chips and stir well until combined and it makes a nice sauce.

Preheat oven to 400 degrees F. While the oven is heating, mix the sugar and cinnamon together into a small bowl. On a cutting board brush the tortillas with butter on both sides and sprinkle cinnamon and sugar on both sides, then cut into triangles with a large butcher knife.

Put a sheet of parchment paper down onto a large baking sheet. Put the tortilla triangles onto the baking sheet and bake for 12 minutes, turning the tortillas half way through the time.

When the chips are done, let them cool about 5 minutes. After they are cooled put them on a plate and arrange the fruit so there is a little bit of fruit on each chip, then drizzle the chocolate sauce on top and enjoy

Chicken Wings

Ingredients:

  • 1 cup Zulka Morena Pure Cane Sugar
  • 1 cup soy sauce
  • 1 dash garlic powder
  • 2 pounds chicken wings

Instructions:

Preheat an oven to 375 degrees F. Prepare a 9×13 inch glass baking dish with cooking spray.

Whisk together the sugar, soy sauce, and garlic powder in a medium bowl. Arrange the wings in the bottom of the prepared dish; pour the soy sauce mixture evenly over the wings.

Bake in the preheated oven for 20 minutes; turn the wings over with a spatula and cook another 20 minutes.
