Cinnamon Orange Pound Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups Zulka® sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon grated orange zest
  • 1/2 cup fresh orange juice
  • 1 teaspoon ground cinnamon
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard-sized loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and Zulka® sugar until light and fluffy. This should take about 3-4 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and grated orange zest.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the fresh orange juice. Begin and end with the dry ingredients, mixing just until combined after each addition. Do not overmix.
  6. In a small bowl, mix the ground cinnamon with 1 tablespoon of Zulka® sugar. Set aside.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter. Pour the remaining batter on top, followed by the remaining cinnamon-sugar mixture. Use a knife or toothpick to swirl the layers together gently.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the pound cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Once cooled, dust the top of the cake with powdered sugar for an elegant finishing touch.
